Grape: Timorasso 100%

 

This wine comes from vines in the municipality of Vho in Tortona, from a specific hill name "Cavallina". This hill is exposed at south-east with an altitude from 250-300m above sea level, the vines are located to the top part of the hill having a 360' sun exposition.

 Soil is majority compose from calcareous - clay.

Vines are about 18 years old and the cultivation system is Guyot (4,000 plants per hectare).

The yeld is about 5,000 kg/hectare and grapes are normally harvested in late September/early October, harvested by hand into small wooden baskets.

Colour is bright golden yellow.

At the nose, intense, with hints of minerals and dried fruit.

At the palate is intense, sapid, warm, harmonic with hints of ripe fruit and notes of minerals.

Ideal with the whole meal, it is perfect as an accompaniment to full-flavoured fish soups and cheese, for preference sheep’s and/or goat’s, or medium mature cow’s cheese made with whole milk.
