Grape: Grillo 100%
Fiordiligi is produced in Mazara del Vallo (Trapani), northwestern of Sicily.
Vineyards are located at 200-250 mt with medium texture soil, rich of limestone and good mineral endowment.
Harvest it's usually from 1st to 2nd week of september, thanks to the insular-mediterranean with mild winters and breezy summers.
After the grapes are been picked, the vinification starts with an extremely soft pressing with membrane press, followed by static clarification of the must and fermentation at controlled temperatures (16°-17°C) in stainless steel tanks.
4/5 months in stainless steel tanks in “sur lies”, then in bottle for at least 2/3 months.
Color is straw yellow with greenish reflection, with scents of Citrus fruit, pineapple and elderflower.
At the palate is in line with olfactory sensations, fresh with salinity and minerality.
Excellent with first course of fish and fish fry.
