Grape: Grillo 100%
Grillo Passito is the new entry of Assuli winery.
The production area is in Mazara del Vallo (TP), northwestern Sicily (Italy) where the soil type is with a medium texture soil, rich of limestone and good mineral endowment.
Vines are located at 200/250 meters a.s.l. and the viticulture is with vertical trellis system with a medium-high plant density (5000 plants/ha).
The climate in that area is an insular-mediterranean with mild winters and breezy summers.
Harvest period time usually stats at the end of September, they harvest the grapes for the vinification of the base wine and until mid-October we harvest the grapes for drying.
Vinification starts with a soft pressing of the grapes for the base wine, followed by cold static decantation; fermentation at controlled temperature (18/20 ° C) in small stainless steel tanks.
Subsequent dried grapes infusion in small stainless steel tanks
Ageing: 7/8 months on fine dregs through batonnage, then in bottles for at least 12 months to ensure the perfect evolution of its bouquet.
TASTING NOTES
Visual: bright golden yellow
Olfactory: complex, intense and persistent with notes of Sicilian citrus fruits and honeyed nuances.
Taste: soft, elegant and seductive with a notable nuance of dried figs and candied fruit.
Pairing: perfect with the best traditional desserts, especially the dry ones, possibly with some fruit.
A dessert wine with low alcohol (13,5%) gives to this wine an easy approach.
