Tignamonte is an orange wine produced in Umbria region, near by the village of Sant'Enea, 15 min drive south of Perugia.
This wine is the result of a careful work done by Carlo Tabarrini,
who from 2008 dedicate himself to improve his own land without any chemicals and with a minimum use of mechanical machinery.
Grapes are hand picked in November, at that time Botrytis is already present on the grapes.
Fermentation started naturally in steel tank without any yeast added, for a total of 30 days without temperature control.
After a soft press the wine will rest for one year in oak barrique (bent by steam).
Before to be bottled, Tignamonte goes again in steel tank for about 3 more months.
No filtration and no clarification.
